In our Liquor Lab, we focus on small-batch distilling using old-world methods that we are continuously refining. We do "Slow Distilling" using the best ingredients and fermenting practices. Our runs require a lot of patience as we craft-distill in traditional alembic copper stills, from Germany. These extended distillation runs are done by slowly increasing the temperature and cannot be rushed. We think that the resulting hand-crafted liquor is well worth the time we spend.
When collecting the heart of the distillate we precision-cut the "head" and take more of the "tail" away to creating a very smooth taste. Using this approach, we can pioneer innovative liquor while offering the best in traditional spirits. Our pot stills allow for classic distilling, preserving tasteful components, copper refining lentils offer higher concentrations that pot stills alone cannot provide. The copper columns allow us to infuse the spirit vapors with natural fruits, plant leaves, herbs or spices during the distiling.
